American Kimchi Medley

American Kimchi Medley

makes 4 to 6 side dishes
2 tablespoons vegetable oil or olive oil
1 medium sweet onion slices in thin strips
1 red bell pepper, sliced in strips
1 green bell pepper, sliced in strips
3 tablespoons. soy sauce
2 sesongi fresh mushroom cut into strips
3/4 cup kimchi
1 green onion (cut into very thin strips for garnish)
METHOD:
Heat oil in a large skillet or sauté pan over medium heat. Wait until the oil gets hot, (the vegetables should sizzle in the pan), and add the onions, the bell peppers, then the soy sauce constantly stirring until they become fork tender, 3 to 4 minutes. Add the mushrooms and kimchi and stir-fry for another 2 minutes, (If the pan starts to dry, slowly add in 1 to 2 tablespoons of water.)
Remove from the heat and serve as a side dish when all items are fork tender, finishing with the green onion garnish.
