Baby Bok Choy Salad

1/4 pound baby bok choy
Soy Sauce Vinaigrette:
3 tablespoons soy sauce
1/2 tablespoon minced garlic
1 tablespoon finely sliced scallion
1 tablespoon minced long green pepper, or any other available pepper
1/2 tablespoon sesame oil
1 teaspoon sesame seed toasted
2 teaspoons Korean red pepper powder
3 tablespoons white vinegar
1 tablepoon sugar
Mix soy sauce vinaigrette ingredients well. Cut baby bok choy into quarters. Clean well with water and drain. Toss well with the vinaigrette, let sit for 15 minutes and serve.
