A second generation Korean-American, David Chang worked at soba-ya Fuyu-Rin in Tokyo and completed various stages at izakayas and ramen houses in Tokyo. He also spent time working at the Tokyo Park Hyatt Hotel (Restaurant New York Grill and Kozue).
Chang returned to New York in 2003 and worked for Chef Andrew Carmellini at Café Boulud. After various stages in noodle houses across the East Coast, Chang now owns and runs Momofuku Noodle bar.
