Chef Medina was born and raised in Mexico City, where he learned to cook at home from his father and grandfather. Besides training at the French Culinary Institute, he apprenticed with Alejandro Heredia at Hacienda de los Morales in Mexico City, honing his skills at preparing a broad range of dishes, from ceviches to guacamoles. He became executive chef at SushiSamba and later helped open SushiSamba7, and another SushiSamba in South Beach, Miami.
In 2003, Chef Medica came back to Manhattan to become corporate chef for all Richard Sandoval’s Mexican restaurants, including Maya, and he helped create the menu for Pampano. Chef Medina has become known for lightening classic Mexican favorites and for his innovative use of unusual ingredients. He might, for example, add black truffles to a quesadilla, or pair corn tortillas with foie gras and mango habanero salsa. Combining tuna with pears in a ceviche shows Chef Medina’s light touch: it’s colorful, citrusy, and emphasizes spices and chiles

I would love to make all of the dishes you made on the tv show. I would have eat all the dishes did not like none and when i say none of the others cook dish i mean none.
