In late 1999, the first Sushisamba opened in New York. The sake side of the Sushisamba wine list quickly became Paul Tanguay’s passion. Soon, Tanguay was traveling to Japan, visiting many sake kura (sake brewers) and learning about its rich history and manufacturing processes. In both 2003 and 2004, Tanguay was elected a judge at the U.S. National Sake Appraisal, the largest sake tasting event outside of Japan. At the event, he tasted and judged aromas, flavors, and balances of 150 sake. Tanguay was also instrumental in bringing The Joy of Sake, the largest sake-tasting event outside of Japan, to New York City. And in 2004, Tanguay was honored to be one of a handful of Americans to attend the public tasting of the Zenkoku Shinshu Kampyokai in Hiroshima, the largest sake tasting event in the world.
As beverage director for Sushisamba’s four locations in New York, Chicago and Miami, Tanguay is a busy man, yet he makes time to personally teach Sake and Sushi 101 at all four locations. Guests taste five different sakes while learning how to make basic sushi roles in a supportive and fun atmosphere.
