Barbecued Duck Skewers

1 duck breast
4 wooden BBQ skewers

For Marinade
1 tablespoon hoisin sauce
1 pinch 5 spice
1 teaspoon red miso
1 teaspoon mirin
1 stick lemongrass-chopped
1 teaspoon ginger – finely chopped
1 teaspoon orange juice

For Garnish
2 pinches sansyo pepper
1 kaffir lime leaf – sliced thin
1 Thai chili – sliced thin
2 cilantro leaves – finely chopped
¼ fresh lime for juice

1. Score Duck Breast and then cut into bit-sized pieces. Combine Marinade ingredients together.
Place duck breast pieces and marinade in a container and allow to marinate in the fridge for 2 hours.

2. Place 4 to 5 marinated duck pieces on skewer. Place on BBQ grill with skin side down.
Cook duck skewers approximately 5 to 7 minutes, turning the skewers in between. Plate skewers and sprinkle Sansyo Pepper on top. Toss together the remaining garnish ingredients and sprinkle on top of the skewer.
