Chef Jimmy Wu was trained as a classical violinist since he was a child in Shanghai, China.

As a teenager Jimmy came to America to study music in Chicago, finding kitchen work at the prestigious Hotel Nikko, where he wound up falling in love with Japanese cuisine.

Three years later he was allowed to handle a knife; 15 years later he owns his own restaurant as an accomplished sushi chef.
