Kazuo Yoshida from Japan employs a very comprehensive approach to sushi, taking into account the season, weather, time of day, temperature, and humidity before creating his dishes. His encyclopedic knowledge of the sushi art form allows him to be very inventive, regularly crafting new dishes to astonish and delight his customers.
