Persimmon and Daikon Salad

Daikon helps digestion and work well with persimmon’s sweetness to bring balance to your body. Persimmon is also good for protecting your stomach. This salad is easy on your digestive system especially after eating too much from a party.
Persimmon and Daikon Salad

Serves 2
1 fuyu persimmon, peeled, cut 1/2″ length & width, thin slices
1 daikon (9 inch length), peeled, cut 1/2″ length & width, thin slices
1 ounce green beans, cooked
Dressing
1 tablespoon lemon juice
1 tablespoon olive oil
salt to taste
Salt daikon and persimmon in a separate bowl and let them sit until they become soft. Squeeze water from daikon, combine with persimmon. Add dressing and green peas.
