Lemongrass is extremely fibrous and provides a zesty lemon flavor. It stimulates digestion and has been used in Chinese medicine for flu, colds, headaches, arthritis and abdominal pains. When purchasing lemongrass, look for firm stalks. Buy those with pale yellow colored lower stalks and green upper stalks.
