Calamansi Collins

Serves 1

2 ounces gin
1 ounce calamansi juice*
¾ ounce lemon juice
½ ounce lime juice
club soda

Stir all ingredients together with ice and strain into a tall Collins glass. Top off with club soda.

Chef’s Quote:* Calamansi is a Southeast Asian citrus similar to a small, very tart lime. These are available fresh in large Asian markets in the U.S. If unavailable, a suitable substitute would be to combine 2/3 fresh lime juice with 1/3 fresh tangerine juice and a few drops of lemon.
