This easily mixable and delicious syrup is one of our favorites.

Makes 1/2 cup (125 ml)

1/2 (125 ml) 2:1 Simple Syrup (1 cup sugar to 1/2 cup water)

One 2-in (5-cm) piece fresh ginger, peeled and sliced

Combine the 2:1 Simple Syrup and the sliced ginger in a small saucepan and bring to a boil. Reduce the heat and simmer for 5 minutes. Remove from the heat and steep for 30 minutes. Strain into a clean glass jar or bottle with a tight-fitting lid. Store in the refridgerator.
