Like short skirts, this fashion-plate drink—combining creamy white lychees with hot pink watermelon—is meant for the hot days of summer. Serve with a straw and long-handled spoon to retrieve refreshing pieces of fruit. Warning: this delicious cocktail from Jeremy Shipley of Longrain Restaurant & Bar does not remotely taste of alcohol, making it easy to consume in quantity.
Four 1-in (2.5-cm) pieces fresh watermelon
4 lychees
1/2 oz (15 ml) Simple Syrup
1 1/2 oz (45 ml) Lychee-Infused Vodka
1/2 oz (15 ml) lychee liqueur
Dash of freshly squeezed lime juice
3 oz (90 ml) unfiltered apple juice or apple cider
Combine the watermelon, lychees and Simple Syrup in a large collins glass, and muddle. Combine enough ice to fill a large collins glass and the remaining ingredients in a shaker and shake vigorously. Pour into a large collins glass and stir thoroughly. Add more ice if needed.
