Ginger-Infused Vodka

This popular infusion is used in several cocktails. If you love the spicy flavor of ginger we recommend you allow the vodka to infuse two days. If you prefer something more restrained, infuse for 36 hours.

1/2 lb (250 g) fresh ginger, peeled and coarsely chopped

One 750-ml bottle vodka

Place ginger in vodka and let ginger infuse for 36-48 hours. Strain and rebottle the infused vodka.
