    My fave is an Asian beef and veggie casserole. I actually got the recipe from here http://www.taste.com.au/recipes/17826/asian+beef+vegetable+casserole

    It turns out great everytime and even the kids love it!

    My Asian inspired is Pad Thai with either chicken, beef, or shrimp. I like making a big tray and bringing it into work…. it’s so much better than going out for fast food.

    When I have left over short grain rice, I crumple it up cold and add sprouts and fresh veggies with some peanuts and fish sauce for a nice casserole.
