Sauteed Green Beans and Potatoes (Aloo France Beans)

This easy to make this green bean and potato sautéed dish which goes best with Indian breads or rice.  When shopping for fresh green beans, look for the bright green and crisp, firm ones rather than the softer, flimsy ones. The best ones will make a snapping noise when broken in half.  For Thanksgiving, instead of the common green bean casserole, this is a great substitute for something different, much more delicious, nutritious, and less fattening.

Easy Shrimp Curry (Masala Jhinga)

In this dish, shrimp are cooked in a masala (spiced tomato and onion base) in which I combined the cooking styles and flavor of northern and southern India. The masala base is a northern Indian style used by my mother, but I have added mustard seeds as a spice, which are common in southern Indian cooking and are used by my mother-in-law.

This rich restaurant favorite is made from a firm style of Indian cheese that is cut into cubes and lightly pan-fried, and then simmered with spinach in heavy cream. This dish is accurately called palak paneer, since palak is spinach, and paneer is Indian cheese, but I have seen it more commonly called saag paneer.

This is my mother-in-law’s recipe for garam masala, a popular roasted spice mix that is used throughout India. Like many Indians, she makes her personal version of garam masala at home, based on the flavors she prefers in her cooking style. I like her personal blend because the flavors are well balanced, and the spices she uses can easily be found at my local grocery store.
