This month we sit At the Table with Straits restaurant owner/chef Chris Yeo to discuss his new venture in partnership with rapper Ludacris and take a trip with celebrity chef and Makansutra Food Guide author K.F. Seetoh as he navigates us through the hawker food centres of Singapore. We also learn how to employ the “decision tree” concept to decide what kind of fruits and vegetables to buy in our new Asian Green Guide column with the help of Jay Weinstein and enjoy a sampling of Singaporean specialties from some of our favorite chefs. Finally, New Asian Cuisine has been nominated for a Divine Caroline "Love This Site" Award and we're looking to our dedicated fans to vote!

AMUSE-BOUCHE WITH K.F. SEETOH, FOUNDER, MAKANSUTRA
 

“I eat the food, but I digest the culture,” says K.F. Seetoh, author of the wildly popular Makansutra Singapore Food Guide (now in its seventh edition). On a mission to celebrate Asian food, culture and lifestyle, Seetoh's background as a photographer compliments his multi-media form of storytelling with the Singapore based boutique food company he founded. In addition to self publishing Makansutra, he produces web and mobile content, runs and manages a food court and conducts food tours and gourmet safaris. On his TV series, the Cantonese Singaporean is known for zipping around on his trademark scooter, food hopping from one stall to another around the island, in search of yet another dish to whet his insatiable appetite. NAC caught up with Seetoh by cellphone while he was feasting on a Snapper Head Charcoal Hot Pot at the Whan Poa Hawker Centre at 9:30 in the evening in Singapore. Says Seetoh,"Food is the greatest democracy we have here."

Born in Hong Kong and raised in Singapore, Chris Yeo traded his very successful career as a hair stylist 20 years ago to introduce his beloved Singaporean cuisine to the San Francisco Bay Area and currently has three Straits restaurants in San Francisco, Burlingame and San Jose (Santana Row) and a Chinese fusion concept, Sino restaurant, also in Santana Row. When Chris "Ludacris" Bridges, the Grammy award winning rapper and actor, sampled Yeo's modern spin on Singaporean cuisine, he proposed a partnership and together they opened Straits in Atlanta in May. NAC caught up with the very busy chef/owner in his California office to discuss his burgeoning restaurant empire.
