Chef’s Note: I’ve spent years modifying this sauce to get the right taste and texture. It’s healthy and goes great with any kind of seafood. Everyone loves it and it’s versatile enough for dipping, salads and a garnish.

As a teenager Jimmy came to America to study music in Chicago, finding kitchen work at the prestigious Hotel Nikko, where he wound up falling in love with Japanese cuisine. Three years later he was allowed to handle a knife; 15 years later he owns his own restaurant as an accomplished sushi chef.
