A budding musician at the age of 15, he took a job in Tokyo at at California style restaurant in order to support his passion as a guitar player in a rock band, which was heavily influenced by American and British music. Barbecued Duck Skewers By Noriyuki Sugie, Executie Chef/Co-President, IronNori 1 duck breast 4 wooden BBQ skewers For Marinade 1 tablespoon hoisin sauce 1 pinch 5 spice 1 teaspoon red miso 1 teaspoon mirin 1 stick lemongrass-chopped 1 teaspoon ginger – finely chopped 1 teaspoon orange juice For Garnish 2 pinches sansyo pepper 1 kaffir lime leaf – sliced thin 1 Thai chili – sliced thin 2 cilantro leaves – finely chopped ¼ fresh lime for juice 1.
