The sake side of the Sushisamba wine list quickly became Paul Tanguay’s passion. Soon, Tanguay was traveling to Japan, visiting many sake kura (sake brewers) and learning about its rich history and manufacturing processes. In both 2003 and 2004, Tanguay was elected a judge at the U.S. National Sake Appraisal, the largest sake tasting event outside of Japan.
