Simpson Wong exemplifies the contemporary chef adept at interpreting his many global influences. A native of Malaysia with Chinese ancestry, Wong has lived, traveled, and studied cuisine throughout Asia and Europe. In 1996, Wong opened Cafe Asean, a cozy West Village restaurant serving authentic Vietnamese, Thai and Malaysian dishes. He opened Jefferson in early 2003, where he served a New American menu that brought together diverse influences from all regions of the world. Jefferson was voted “Best Neighborhood Restaurant” by New York Magazine in 2003. Open just over two years, Wong suffered a heart attack and closed Jefferson.

[/print_this] Calamansi Collins By Simpson Wong, Cafe Asean Serves 1 2 ounces gin 1 ounce calamansi juice* ¾ ounce lemon juice ½ ounce lime juice club soda Stir all ingredients together with ice and strain into a tall Collins glass. Top off with club soda. Chef’s Quote:* Calamansi is a Southeast Asian citrus similar to a small, very tart lime. These are available fresh in large Asian markets in the U.S. If unavailable, a suitable substitute would be to combine 2/3 fresh lime juice with 1/3 fresh tangerine juice and a few drops of lemon.
